A little recipe….

It is Sunday night, the end of a fun weekend.  Saw various art shows, concerts and family, very lovely.  But when you get home sometimes from a little time away, there is hardly anything in the fridge to make a meal out of.  At least that is what happens to me often.  Not tonight though as I went to a birthday party today and ate cake and cheeses like my life depended on it.  Only to then on my way home, it was an hour away, stop and get some french fries to eat on my way home, so now I just feel a bit ick.  But the other day when I got home from a little trip, I actually did make something nice out of what felt like nothing, and took some photos too.

So, other than some dairy products that could almost speak for themselves, I did have a lemon that was on it’s last legs, a quarter of an onion, hardly a handful of frozen sweet little beans and cherry tomatoes.  Had bought them to bring as a healthy snack “on the road”  but had forgotten about them on the way.  Oooh and some parmesan to the rescue.  Plus some spaghetti.

I zested the lemon and squeezed half of it’s juice out into a bowl.  Chopped the onion and the tomatoes.  Put some spelt spaghetti in boiling water, and cooked according to package, I use spelt pasta because it feels less clumpy in the stomach.   Meanwhile, I swished the onion around on a hot pan with some oil until soft and slightly browning, then chucked in the frozen beans, stirred and then the tomatoes.  Some salt and black pepper and then put in the lemon juice and zest, smelt lovely by the way.  Stirred for a few minutes, hardly that though.  Put in a little more salt and pepper, and a pinch of garlic powder, then stirred in the spaghetti, remembered the parmesan and quickly added that.  Much to my surprise it was lovely, so fresh and nice yum.  To drink with it, hmmmm I only had about half a glass of sparkly lime water, so I added some frozen raspberries, ice and regular water, and hey!  A new favorite was born.  I now treat an empty fridge like a challenge, this time it worked, but sometimes it fails miserably.
